preheat the oven to 180 degrees Celsius. add some water to a baking dish and place the beet in the middle. put it in the oven and roast it for 1 hour. in the meantime, make the pancake batter. mix 400 ml oat milk, 2 eggs, 200 g patent flour, and the vanilla from the 2 vanilla pods together in a mixing bowl. put aside.
take the beet out of the oven and let it cool down. take the skin of and cut into small pieces. add the pieces to the blender together with 100 ml oat milk and blend until smooth. add a tablespoon of maple syrup.
add the beet mixture to the pancake batter and mix until you get an even pink mass. bake the pancakes in a small pan, because small pancakes are more fun!
serve with quark, maple syrup and blueberries.
