ramen with bok choy and oyster mushrooms by guest evelien

ingredients for 2 servings

180 gram ramen (Japanese noodles)

1,5l vegetable stock

2 cloves of garlic

2 cm fresh ginger

½ red pepper

2 teaspoons fish sauce

3 tablespoons soy sauce

100 gram soya sprouts

1 bok choy

2 spring onions

6 oyster mushrooms

2 eggs

black sesame seeds

instructions

bring the 1,5l vegetable stock to boil. in addition, cook the ramen al dente by following the instructions on the package. cut the bok choy very finely and the oyster mushrooms in nice strips. boil the eggs gently, 5 minutes is perfect. season the vegetable stock with ginger, garlic, fish sauce, soy sauce and the red pepper. cook well.

arrange the fine vegetables with the soya sprouts and the noodles in your serving bowl. sift the spicy stock. shower the vegetables with hot stock so that they can cook. carefully peel the egg and cut in two. place it nicely on your dish. chop the spring onions fine and finish your bowl with spring onions and black sesame seeds.
