last but certainly not least; my very own recipe of carrot cake waffles for the easter festive tips! a perfect way to add a blink to the rabbits on your brunch. simple and themed dessert and very important; matches with chocolate as well.

ingredients for 4 servings
400 gram unsalted butter
500 gram pastry flour
300 gram fine sugar
½ teaspoon baking powder
1 teaspoon vanilla powder
250 gram grated carrots
melt the butter on a low heat in a saucepan. don’t let it cook. mix the flower and sugar in a large bowl, add the baking powder and vanilla. mix well.
add the eggs one by one while mixing, continue until everything is mixed. pour in the melted butter and continue mixing until you become the perfect batter. add a bit of salt.
roughly cut the grated carrots and add to the batter. (as much as you like to taste) finish with 1½ teaspoon of cinnamon and mix well. taste the batter if it needs more carrots or cinnamon or vanilla.
heat the waffle iron. do not add butter to the iron! scoop the batter with the ice cream scoop, then you have the right amount of batter. bake the waffles until they’re golden brown. leave them aside to cool down.
serve with lemon zest, orange slices and sprinkles of carrots.
