granola ∙ inspired by The Kinfolk table

here’s the recipe of the monthly granola I make, inspired by the book The Kinfolk table. I love the recipe because the granola tastes like cookies and you can eat it with your favorite yogurt and fruits or with milk as in the old days. in this recipe we make an almond-coconut granola, but you can choose to make it with hazelnuts, walnuts… or whatever you like! all sorts of combinations are possible, just keep the oil mixture.

time 10 minutes (+ 60 minutes baking)

baking sheet

ingredients for 500 grams

300 grams whole rolled oats

170 grams raw almonds, coarsely chopped

70 grams flaxseeds

50 grams unsweetened shredded coconut

½ teaspoon cinnamon

Preheat the oven to 150 degrees. Combine the oats, almonds, flaxseeds, coconut, cinnamon and vanilla powder in a large bowl. Make the oil mixture in a small bowl by mixing the sunflower oil, honey and orange juice.

Add the oil mixture to the oat mixture and stir until combined.

Cover a baking tray with a baking sheet and spread the granola on the sheet. Bake, stirring every 15 to 20 minutes, for 45 to 60 minutes or until golden brown. Cool the granola completely and enjoy with your favorite yogurt, fruits or milk.
