veggie broccoli burgers ∙ with avocado spread and marinated sweet point red pepper

ingredients for 2 servings

for the hamburger patties

3 eggs

1 broccoli

100 g almond flour

60 g hard goat cheese, grated

1/2 tablespoon vegetable bouillon powder

1 teaspoon ground coriander

1 teaspoon cumin

1 medium red onion

2 cloves garlic

coconut oil, for frying


for the burgers

6 hamburger buns

2 carrots

1 avocado

2 teaspoons sour cream

1/2 lime

radishes

mixed salad

1 sweet point red pepper

1 shallot

2 tablespoons red wine vinegar

2 tablespoons soy sauce


instructions

wash and cut the radishes, put aside. chop the ends of the carrots, peel them and peel the rest of the carrots in thin strips. heat the sweet point red pepper in a bowl in the microwave for about 5-6 minutes. when it’s soft, put it in a plastic storage bag to rest.

peel and cut the shallot into small pieces, put in a small bowl. add two tablespoons of red wine vinegar and 2 tablespoons of soy sauce. take the sweet point red pepper out of the bag and peel of the skin with your fingers. pull the flesh of the pepper apart into thin strips. mix this with the marinade of shallot, red wine vinegar and soy sauce. set aside.

make the avocado spread. peel the avocado and cut into pieces. mash the pieces by using a fork. add 2 teaspoons of sour cream and add 1/2 lime to keep the color.

beat the eggs in a large mixing bowl using a fork. rinse the broccoli, separate the florets and finely chop the stem. transfer the broccoli to a blender and blitz until the broccoli is finely ground. combine the broccoli with the almond flour, grated cheese, bouillon powder, coriander and cumin in the large mixing bowl with the beaten eggs.

finely chop the onion and add to the broccoli mixture. using a garlic press, press the garlic cloves directly into the bowl. knead the mixture until a sticky dough is formed.

heat two teaspoons of coconut oil in a large frying pan. spoon one tablespoon of the broccoli mixture into your hand, press it flat into a patty and place it in the pan. flip the burgers about three to four minutes in, when the underside is golden brown and then cook for another three to four minutes. repeat this process until all the ‘dough’ has been used up. 

cut the hamburger buns in half and toast for a few minutes in the toaster. spread the avocado spread on both sides of the buns, add mixed salad, broccoli burger, carrots, radishes and the marinated sweet point red pepper.
